Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1/2 cup fresh cilantro chopped
  • 1 medium orange juiced and zested
  • 2 cloves garlic minced
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs preferably panko
  • Oil for frying

Method
 

  1. Prepare the marinade by mixing orange juice, zest, minced garlic, cilantro, honey, chili powder, salt, and pepper in a bowl.
  2. Cut the chicken breasts into bite-sized pieces and place them in the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes.
  3. Preheat your oil in a skillet or pan over medium heat.
  4. Dredge the marinated chicken pieces in breadcrumbs, making sure they're well-coated.
  5. Carefully add the chicken pieces to the hot oil and fry for about 3-4 minutes on each side until golden brown and cooked through.
  6. Once cooked, remove the chicken bites from the oil and place them on a paper towel-lined plate to absorb excess oil.
  7. Serve warm, garnished with additional cilantro and orange wedges if desired.
