Ingredients

  • 12 lasagna noodles
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 1/2 teaspoon ground cinnamon
  • Zest of 1 lemon
  • Fresh mint leaves for garnish

Instructions

  • Cook the lasagna noodles according to package directions and drain them; set aside.
  • In a mixing bowl, combine the mascarpone cheese, whipped cream, powdered sugar, vanilla extract, lemon zest, and ground cinnamon until smooth and creamy.
  • Spread a thin layer of the mascarpone mixture onto the bottom of a 9x13 inch dish, then place three cooked lasagna noodles on top.
  • Layer one-third of the mixed berries over the noodles, followed by another layer of the mascarpone mixture.
  • Repeat the layering process two more times, finishing with a final layer of the mascarpone mixture on top.
  • Cover and refrigerate the dessert lasagna for at least four hours, preferably overnight, to allow the flavors to meld and the structure to set.
  • Before serving, garnish with fresh mint leaves and additional mixed berries as desired.
