Ingredients
  

  • 2 pounds beef chuck roast
  • 1 onion chopped
  • 4 cloves garlic minced
  • 4 carrots sliced
  • 3 potatoes diced
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

  1. Prep the ingredients and cut the beef into chunks.
  2. Season the beef with salt and pepper.
  3. Brown the beef in a skillet over medium-high heat.
  4. Transfer the beef to the slow cooker and add chopped onion and minced garlic.
  5. Add the carrots and potatoes to the slow cooker.
  6. Stir in the beef broth, tomato paste, Worcestershire sauce, and dried thyme.
  7. Cover and set the slow cooker to low for 6-8 hours.
  8. Check for seasoning before serving.
  9. Serve hot, using a slotted spoon if needed.
