Preheat your oven to 400°F (200°C).
Wash and pierce the sweet potatoes with a fork.
Rub the sweet potatoes with olive oil and sprinkle with salt.
Roast the sweet potatoes for 45-55 minutes, or until tender.
While the potatoes are roasting, prepare the apple filling.
Chop the apples and mix them with brown sugar, cinnamon, nutmeg, and chopped pecans.
Add apple cider to the mixture and stir to combine.
Remove the sweet potatoes from the oven and let them cool slightly before slicing.
Carefully slice each sweet potato down the center and gently open them up.
Spoon the apple mixture into each sweet potato and return to the oven.
Bake for an additional 15 minutes, then remove and serve warm.
