Ingredients

  • 4 medium sweet potatoes
  • 2 medium apples Granny Smith or Honeycrisp
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup apple cider

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce the sweet potatoes with a fork.
  • Rub the sweet potatoes with olive oil and sprinkle with salt.
  • Roast the sweet potatoes for 45-55 minutes, or until tender.
  • While the potatoes are roasting, prepare the apple filling.
  • Chop the apples and mix them with brown sugar, cinnamon, nutmeg, and chopped pecans.
  • Add apple cider to the mixture and stir to combine.
  • Remove the sweet potatoes from the oven and let them cool slightly before slicing.
  • Carefully slice each sweet potato down the center and gently open them up.
  • Spoon the apple mixture into each sweet potato and return to the oven.
  • Bake for an additional 15 minutes, then remove and serve warm.
