1 cup grated zucchini (squeeze out liquid)

1/2 cup breadcrumbs

1/3 cup grated parmesan cheese

1 egg

2 cloves garlic, minced

1/4 tsp Italian seasoning

Salt & pepper to taste
Instructions

Preheat oven to 400°F. Grease a mini muffin tin or baking sheet.

Combine all ingredients in a bowl and mix well.

Scoop into muffin tin or shape into small balls and place on baking sheet.

Bake for 18–20 minutes until golden brown.
