  • 3 cups all-purpose flour

  • 1 tsp cinnamon

  • 3 eggs

  • 1 cup vegetable oil

  • 2 cups sugar

  • 2 tsp vanilla extract


Instructions

  • Preheat oven to 350°F. Grease two 9×5 loaf pans.

  • In a large bowl, whisk eggs, oil, sugar, and vanilla.

  • Mix in grated zucchini.

  • In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.

  • Stir dry ingredients into wet until just combined.

 

  • Pour batter into pans and bake for 50–60 minutes.
