Instructions

Preheat oven to 350°F. Grease two 9×5 loaf pans.

In a large bowl, whisk eggs, oil, sugar, and vanilla.

Mix in grated zucchini.

In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.

Stir dry ingredients into wet until just combined.

Pour batter into pans and bake for 50–60 minutes.
