Ingredients

  • 1 tablespoon olive oil

  • 1 pound ground turkey

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 stalks celery, chopped

  • 2 medium carrots, chopped

  • 1 medium zucchini, chopped

  • 1 cup chopped green beans (fresh or frozen)

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 4 cups chicken broth

  • 1 teaspoon salt (or to taste)

  • ½ teaspoon black pepper

  • ½ teaspoon dried basil

  • ½ teaspoon dried oregano

  • 2 cups fresh spinach (optional, stirred in at the end)


Instructions


1️⃣ Heat olive oil in a large pot over medium heat.
2️⃣ Add ground turkey and cook, breaking it up with a spoon, until no longer pink.
3️⃣ Stir in chopped onion and garlic; cook for 2-3 minutes until fragrant.
4️⃣ Add celery, carrots, zucchini, green beans, diced tomatoes, chicken broth, salt, pepper, basil, and oregano.
5️⃣ Bring to a boil, then reduce heat and simmer for about 20 minutes, until vegetables are tender.
6️⃣ Stir in spinach at the very end, just until wilted.
7️⃣ Taste and adjust seasonings if needed. Serve hot and enjoy!
