Summer Corn Soup: A Refreshing and Creamy Homemade Delight

Ingredients

  • 4 fresh corn cobs (kernels removed)

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 2 tbsp butter

  • 4 cups chicken or vegetable broth

  • 1 cup milk or cream

  • Salt & pepper to taste

  • Chopped chives for garnish


Instructions

 

  1. In a pot, melt butter and sauté onion and garlic until soft.

  2. Add corn kernels and cook for 5 min.

  3. Pour in broth and simmer for 15 min.

  4. Blend half the soup for creaminess, then return to pot.

  5. Stir in milk or cream. Season with salt & pepper.

  6. Garnish with chives before serving.
