4 fresh corn cobs (kernels removed)

1 medium onion, chopped

2 garlic cloves, minced

2 tbsp butter

4 cups chicken or vegetable broth

1 cup milk or cream

Salt & pepper to taste

Chopped chives for garnish
Instructions

In a pot, melt butter and sauté onion and garlic until soft.

Add corn kernels and cook for 5 min.

Pour in broth and simmer for 15 min.

Blend half the soup for creaminess, then return to pot.

Stir in milk or cream. Season with salt & pepper.

Garnish with chives before serving.
