2 chicken breasts

2 cups pretzels, crushed

1 cup flour

2 eggs, beaten

2 tbsp olive oil

1 tbsp butter

1 tbsp flour (for sauce)

1 cup milk

1 cup shredded cheddar cheese

2 tbsp Dijon mustard
Instructions

Preheat oven to 375°F.

Coat chicken in flour, then dip in eggs, then press into crushed pretzels.

Heat oil in a skillet, sear chicken 2 minutes per side, then transfer to baking dish and bake 20 minutes until cooked through.

For sauce: melt butter, whisk in flour, then slowly add milk until thickened.

Stir in cheddar and mustard, season with salt & pepper.

Serve chicken with warm mustard-cheddar sauce drizzled on top.
