1 cup graham cracker crumbs

16 oz cream cheese, softened

1/2 cup sugar

2 eggs

1/4 cup lemon juice

Zest of 1 lemon
Instructions

Preheat oven to 325°F. Line a muffin tin with liners.

Mix crumbs, sugar, and butter; press into liners.

Beat cream cheese and sugar until smooth. Add eggs, lemon juice, and zest.

Pour over crusts and bake 18–20 minutes. Cool before serving.
