8 oz rotini pasta

2 cups corn (fresh or frozen)

1/3 cup mayonnaise

1/3 cup sour cream

1/2 cup cotija cheese, crumbled

1 tsp chili powder

Juice of 1 lime

Fresh cilantro for garnish
Instructions

Cook pasta according to package instructions, drain, and cool.

Cook corn in a skillet until lightly charred.

In a large bowl, mix mayo, sour cream, lime juice, and chili powder.

Add pasta, corn, and cotija cheese; toss well.

Garnish with cilantro before serving.
