Ingredients

  • 8 oz rotini pasta

  • 2 cups corn (fresh or frozen)

  • 1/3 cup mayonnaise

  • 1/3 cup sour cream

  • 1/2 cup cotija cheese, crumbled

  • 1 tsp chili powder

  • Juice of 1 lime

  • Fresh cilantro for garnish


Instructions

 

  1. Cook pasta according to package instructions, drain, and cool.

  2. Cook corn in a skillet until lightly charred.

  3. In a large bowl, mix mayo, sour cream, lime juice, and chili powder.

  4. Add pasta, corn, and cotija cheese; toss well.

  5. Garnish with cilantro before serving.
