  • 2 large eggplants, sliced

  • 2 cups marinara sauce

  • 2 cups shredded mozzarella

Instructions

 

  1. Preheat oven to 375°F. Dip eggplant slices in egg, then coat with breadcrumbs.

  2. Bake 20 minutes until golden.

  3. Layer sauce, eggplant, and cheese in baking dish. Repeat layers.

  4. Bake 25 minutes until bubbly.
