2 cups mashed potatoes (leftover or fresh)

1 cup shredded cheddar cheese

1 egg

1/4 cup chopped green onions (optional)

Salt and pepper to taste
Instructions
1️⃣ Preheat oven to 400°F.
2️⃣ In a bowl, mix mashed potatoes, cheese, egg, green onions, salt, and pepper.
3️⃣ Scoop spoonfuls of the mixture onto a greased baking sheet or into muffin cups.
4️⃣ Bake for 20–25 minutes, until golden and puffy.
5️⃣ Let cool slightly before serving.
