2 cups grated zucchini

2 cups all-purpose flour

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 cup vegetable oil

1 cup sugar

2 eggs

Zest of 1 lemon
For the glaze:

1 cup powdered sugar

2–3 tbsp lemon juice
Instructions

Preheat oven to 350°F. Grease a loaf pan.

In one bowl, whisk oil, sugar, eggs, and lemon zest. Stir in zucchini.

In another bowl, combine dry ingredients. Add to wet and mix.

Pour into pan and bake 50–55 minutes.

Cool, then drizzle glaze over top.
