Lemon Zucchini Bread with Lemon Glaze: A Bright, Moist, and Irresistible Treat

Ingredients

Scale
  • 2 cups grated zucchini

  • 2 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup vegetable oil

  • 1 cup sugar

  • 2 eggs

  • Zest of 1 lemon

For the glaze:

  • 1 cup powdered sugar

  • 2–3 tbsp lemon juice


Instructions

  • Preheat oven to 350°F. Grease a loaf pan.

  • In one bowl, whisk oil, sugar, eggs, and lemon zest. Stir in zucchini.

  • In another bowl, combine dry ingredients. Add to wet and mix.

  • Pour into pan and bake 50–55 minutes.

 

  • Cool, then drizzle glaze over top.
