1 1/2 cups all-purpose flour

2 tsp baking powder

1/2 tsp salt

1 cup plain yogurt

1 cup sugar

3 eggs

1/2 cup vegetable oil

Zest of 1 lemon

1 cup huckleberries
Instructions

Preheat oven to 350°F. Grease a loaf pan.

In one bowl, whisk yogurt, sugar, eggs, oil, and lemon zest.

In another, mix flour, baking powder, and salt.

Combine wet and dry ingredients, then gently fold in huckleberries.

Pour into pan and bake 50–55 minutes. Cool before slicing.
