Lemon Yogurt Loaf with Huckleberries: A Moist, Tangy, and Fruity Delight

Ingredients

  • 1 1/2 cups all-purpose flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup plain yogurt

  • 1 cup sugar

  • 3 eggs

  • 1/2 cup vegetable oil

  • Zest of 1 lemon

  • 1 cup huckleberries


Instructions

  • Preheat oven to 350°F. Grease a loaf pan.

  • In one bowl, whisk yogurt, sugar, eggs, oil, and lemon zest.

  • In another, mix flour, baking powder, and salt.

  • Combine wet and dry ingredients, then gently fold in huckleberries.

 

  • Pour into pan and bake 50–55 minutes. Cool before slicing.
