Garlic Butter Chicken Bites with Creamy Pasta: The Ultimate Comfort Food

For the Chicken Bites:

  • 2 lbs boneless, skinless chicken breasts, cut into bite-size pieces

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 2 tablespoons olive oil

  • 3 tablespoons butter

  • 4 garlic cloves, minced

  • 2 tablespoons fresh parsley, chopped (for garnish)

For the Creamy Pasta:

  • 3 cups penne or rotini pasta

  • 2 tablespoons butter

  • 3 garlic cloves, minced

  • 1 1/2 cups heavy cream

  • 1 cup grated Parmesan cheese

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper


Instructions

 

  1. Cook the pasta in salted boiling water according to package directions. Drain and set aside.

  2. While pasta cooks, season chicken pieces with salt, pepper, and garlic powder.

  3. Heat olive oil in a large skillet over medium-high heat. Add chicken bites and cook for about 5–7 minutes, stirring occasionally, until golden and cooked through. Remove to a plate.

  4. In the same skillet, reduce heat to medium, melt the butter, and add minced garlic. Sauté for 1 minute. Return the chicken bites to the skillet and toss to coat in garlic butter. Keep warm.

  5. In another pan (or wipe the skillet clean), melt butter for the pasta sauce. Add minced garlic and sauté for 1 minute. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, salt, and pepper.

  6. Add cooked pasta to the sauce and toss to coat. Simmer for 1–2 minutes until creamy and heated through.

  7. Serve the garlic butter chicken bites over the creamy pasta. Garnish with chopped parsley.
