Ingredients

2 cups cooked shredded chicken (rotisserie chicken works great)

4 sandwich rolls or slices of hearty bread

1 ripe avocado

4 slices cheddar cheese (or your favorite melty cheese)

2 tablespoons mayonnaise

1 tablespoon lemon juice

Salt & pepper to taste

Butter or cooking spray (for toasting)
Instructions

In a small bowl, mash the avocado with lemon juice, salt, and pepper until smooth.

Spread a thin layer of mayonnaise on the inside of each roll or bread slice.

On the bottom half of each roll, layer shredded chicken evenly.

Spread the mashed avocado on top of the chicken.

Place a slice of cheddar cheese over the avocado on each sandwich.

Close the sandwich with the top half of the roll or bread.

Heat a skillet or griddle over medium heat. Lightly butter or spray the surface.

Place the sandwiches on the skillet and cook for about 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.

Remove from heat, slice in half if desired, and serve warm.
