  • 1 lb ground beef

  • 1 packet taco seasoning

  • 1 (10 oz) can red enchilada sauce

  • 8 small flour tortillas

  • 2 cups shredded cheddar cheese

  • Optional: sour cream, chopped cilantro


Instructions

1️⃣ Preheat oven to 375°F.
2️⃣ Cook ground beef in a skillet until browned. Drain fat, then stir in taco seasoning and a little water. Simmer 5 minutes.
3️⃣ Spread 2–3 tablespoons of enchilada sauce in the bottom of a 9×13” baking dish.
4️⃣ Fill tortillas with beef mixture and a little cheese, roll up, and place seam-side down in dish.
5️⃣ Pour remaining enchilada sauce over the top, sprinkle with cheese.
6️⃣ Bake 20–25 minutes until cheese is melted and bubbly. Top with sour cream or cilantro if desired.
