1 large butternut squash, peeled and cubed

1 onion, chopped

2 cloves garlic, minced

4 cups chicken or vegetable broth

1/2 cup heavy cream

2 tbsp olive oil

Salt & pepper to taste
Instructions

Heat olive oil in a pot. Add onion and garlic, sauté until soft.

Add squash, broth, salt, and pepper. Simmer 20 minutes until squash is tender.

Blend until smooth, then stir in cream. Serve warm.
