  • 1 large butternut squash, peeled and cubed

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 4 cups chicken or vegetable broth

  • 1/2 cup heavy cream

  • 2 tbsp olive oil

  • Salt & pepper to taste


Instructions

 

  1. Heat olive oil in a pot. Add onion and garlic, sauté until soft.

  2. Add squash, broth, salt, and pepper. Simmer 20 minutes until squash is tender.

  3. Blend until smooth, then stir in cream. Serve warm.
