Ingredients

Scale
  • 1 lb ground beef

  • 1 packet taco seasoning

  • 1/2 cup water

  • 8 flour tortillas (8-inch size)

  • 1 can (15 oz) refried beans

  • 1 cup shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1/2 cup taco sauce

  • 2 tablespoons vegetable oil

  • 1/4 cup diced tomatoes (optional)

  • 1/4 cup sliced green onions (optional)

Instructions

  1. Preheat oven to 400°F.

  2. In a skillet over medium heat, cook the ground beef until browned. Drain fat.

  3. Stir in taco seasoning and water, then simmer for 3–4 minutes until thickened. Remove from heat.

  4. In another skillet, heat vegetable oil over medium heat. Lightly fry each tortilla for about 30–60 seconds per side until crispy. Drain on paper towels.

  5. Spread refried beans evenly over 4 tortillas. Top each with seasoned beef.

  6. Place another tortilla on top of the beef layer to form a “pizza.”

  7. Spread taco sauce over the top tortilla, then sprinkle both cheeses evenly over each “pizza.”

  8. Place on a baking sheet and bake for 5–7 minutes, or until cheese is melted and bubbly.

  9. Garnish with diced tomatoes and green onions if desired. Cut into quarters and serve warm.
