Ingredients
-
1 lb ground beef
-
1 packet taco seasoning
-
1/2 cup water
-
8 flour tortillas (8-inch size)
-
1 can (15 oz) refried beans
-
1 cup shredded cheddar cheese
-
1 cup shredded Monterey Jack cheese
-
1/2 cup taco sauce
-
2 tablespoons vegetable oil
-
1/4 cup diced tomatoes (optional)
-
1/4 cup sliced green onions (optional)
Instructions
-
Preheat oven to 400°F.
-
In a skillet over medium heat, cook the ground beef until browned. Drain fat.
-
Stir in taco seasoning and water, then simmer for 3–4 minutes until thickened. Remove from heat.
-
In another skillet, heat vegetable oil over medium heat. Lightly fry each tortilla for about 30–60 seconds per side until crispy. Drain on paper towels.
-
Spread refried beans evenly over 4 tortillas. Top each with seasoned beef.
-
Place another tortilla on top of the beef layer to form a “pizza.”
-
Spread taco sauce over the top tortilla, then sprinkle both cheeses evenly over each “pizza.”
-
Place on a baking sheet and bake for 5–7 minutes, or until cheese is melted and bubbly.
-
Garnish with diced tomatoes and green onions if desired. Cut into quarters and serve warm.
